Exquisitely detail-oriented dishes blend tradition with contemporary creativity, and the result is sheer excellence. Culinary delights include bavette with beetroot, and smoked herring and beer-marinated wild boar. Naturally, given the region, the wine here is excellent. Vespasia’s two dining spaces offer two very different moods; if the weather is nice, opt to dine al fresco by the breezy, fragrant herb garden. Venture inside and you'll find a stately dining room with regal high-backed leather armchairs, intimate lighting and elegant candles.
The hotel spa is located in the palace's basement which could be off-putting were it not for the magnificence of the space. Vaulted ceilings and centuries-old stone floors make the spot feel hushed and mysterious; you’ll feel inclined to whisper in the sacred-feeling space. There's also a stone hot tub, a sauna, a Turkish bath and a room devoted solely to couples treatments: candlelit and romantic, it makes for a memorable spot.
The rich history of the palace and the land surrounding it is well worth exploring, and the hotel offers a number of bespoke experiences for doing just that. Take a cooking class or learn how to make ricotta, or embark on a 2-day truffle hunting adventure in Monti Sibillini National Park in the hotel's “One Day Like a Real Norcino Man” experience. Further Adventures for the physically fit include rafting biking and hiking excursions; however you choose to spend your holiday, be sure to visit at least one winery before you leave.
