The first order of business in planning your stay at the hotel will be to pick which of the three wings best suits your fancy. The oldest of the trio is the Spanish Colonial Wing – which dates back to 1688 – followed by the French Colonial Wing, which was built by Jesuit priests in the year 1739. Rounding out the trifecta is the American Wing, which began its life as a posh department store in 1905.

Whichever wing you choose, you can expect a glamorous blend of old and new. Each wing combines the influence of its respective architectural traditions with elevated modern flair; in all, you’ll find a bespoke blend of Old World elegance and contemporary grace. Crisp lines add to the spaces a fresh and timely feel, while vintage furniture and exposed quartz stone harkens back to a bygone era. The overall effect is artsy and elegant, an ambience which is all the more heightened in the suites. At El Santuario, you’ll find an enchanting blend of Asian, Spanish and Indian dishes in a gorgeous space that evokes images of an ancient Spanish church, while the elegant 1739 draws its inspiration from the year it’s named for. If you find yourself in the mood for something entirely different, head to Hari’s for eclectic Nikkei cuisine served with a striking visual component. When it comes time for a drink (or two), choose from the opulent, Jesuit monk-inspired Exilio Bar, or the fabulously trendy rooftop bar Capella, which – by the way – also boasts captivating views over the historic quarter.
