With each of the guest rooms, the goal was to recreate the allure of a seventeenth-century shipowner’s residence. This intention was masterfully executed: the Toile de Jouy aesthetic is dreamy and captivating, made all the better by the addition of antique furnishings, period accents and beautiful colour palettes set in fairytale pastels. Bathrooms are equally lovely with their freestanding tubs and bespoke interiors, and expansive suites up both the charm and luxe factors. To make a good thing even better, many of these accommodations feature stellar views of the harbour.
Boutique though it may be, Hôtel de Toiras nevertheless has a robust dining scene. The newest addition to the hotel’s gastronomy is George’s Restaurant: a breakfast spot meets cocktail lounge meets wine cellar meets restaurant, all in one. The regionally inspired fare served here is inspired and contemporary, and the venue’s outdoor terrace features delightful views over the port. Salon d’Olivia (formerly La Table d’Olivia) features a pretty outdoor patio and a floral living space within; visit here for live music and a cocktail or cup of tea. Another option for a drink can be found right next door at the ambient Blue Note Bar. Perhaps the most enchanting option of all is ‘Market Basket’. With this, the hotel will lend you a wicker basket to take into town on your day’s adventures. Fill it with the bounty of local farmers or fishermen; upon your return, the hotel’s chef will turn your findings into an unforgettably unique meal.

The room in shades of jade is soft and poetic to recall the personality of Evangeline, with its wallpaper NINA CAMPBELL (birdcage walk collection), its fabrics BEACON HILL for the shepherdesses, and CANOVAS for the curtains. Evangeline allows us to honor the link between Acadia and Poitou Charente and more particularly Brouage. Among the French that emigrated to Canada in the 17th century, the largest group came from Poitou, Aunis and Saintonge. In the 20th century, half of the Acadian population had a poitevine-saintongeaise roots. That's why Envangeline, as the heroine of Henry Wadsworth Longfellow's poem and identity myth of Acadia, proved to be a choice in the Hôtel de Toiras.
